Best Book The Cook (BTC) options for Singapore Airlines business class ?

Hi all, long time reader first time poster.

I often fly Singapore Airlines business class, occasionally first class, and while I love the lobster thermidor as much as the next person, I'm looking to branch out and try some of the other options, particularly some of the healthier ones, but understandably don't want to get stuck with a boring, tasteless meal in the process by trying to choose something healthy.

Any favourites of your own you can recommend would be greatly appreciated... even if they aren't on the lighter side!

If it makes any difference, I most often fly between Sydney and Singapore, and occasionally onward to London and back.

I enjoyed the nasi lemak and chicken rice from Singapore.

The salmon with lemon sauce from Sydney is also very nice.

Everybody has to do the lobster thermidor or seafood thermidor at least once, it's sort of the classic go-to, but after a few trips I'm changing it up to whatever takes my fancy. On my most recent Sydney-Singapore trip I opted for the Roast Duck Rice (always hard for me to resist duck!) and the return leg was 'Singaporean Style' Chicken and Lamb Satay. Have also had the salmon which Sid suggested, think it's the one served with wild rice, it's delicious.

+1 for the roast duck (itek siow) it's always nicely cooked, full of flavour and a generous serving. The lobster is nice to try for novelty value but a small portion (half tail vs. full tail in first class) - save your lobster experience for the ground.

I have to say that I found the Lobster Thermidor quite a disappointment being stringy and dry. I had the Cauliflower Coconut Curry in the Private Room beforehand and it was simply fantastic, one of the best Indian meals I have ever tasted. Nest time would have 2 or 3 servings of this and forgo the flight meal.

Sorry Guys, Alas Itek Siow has been dropped from BTC..

The confit of duck with mushroom risotto was pretty average but huge.

Can suggest the Laksa and Wonton Noodle Soup with Char Siew, The Pan fried chicken is simple and nice the steaks are always good but depend on the crew and how skilled they are in reheating.  The baked king prawns with chilli are again simple but nice.  The chicken, prawn and lobster curries are all good but change from flight to flight in the amount of heat in the chilli..
Hopes this helps, I have been told by many crews that the wetter (Curries etc) the dish the better it reheat with ovens that are used every flight and may be showing its age.

I'm one of the rare people who is very meh about the Lobster Thermidor. It is alright, I just find it a bit bland for my tastebuds. Indian Style Lamb Shank curry is pretty good, actually any of the curries really because they reheat really well. Peranakan Hokkein Mee Soup on occasion. Always Dim Sum for brekkie.

Straights Chicken Curry ex Singapore is amazing and I have it every time I fly. I agree that the lamb shank curry ex OZ is also very good

I find most of their dishes are of a good to very good standard. The exception is the beef dishes and in particular any steak. These are very over done and all taste was removed half an hour before they finished cooking. Stick with the traditional Singaporean dishes and you rarely find an issue
